The Fallot Dijon Mustard is one of the company's favorite products, and it is often enjoyed on hot dogs and brats. The mustard seeds are mixed directly with wine vinegar, spices, and the manufacturer's specific flavorings. The mixture is then roughly milled without sieving, in order to keep the seeds whole. The dry matter content must be at least 18% of the total weight.
The history of Dijon mustard can be traced back to 1634, when the city of Dijon imposed the first statutes on the mustard-making trade out of concern for the quality of its mustard. The 18th-century discovery of verjuice - the juice from grapes harvested in Burgundy - further enhanced the quality of this fine product.

Fallot is the only Dijon producer that still uses the traditional stone mill method, as they believe it is essential to guaranteeing a quality product. The seeds are selected for their quality and are still ground using traditional millstones.
